Here's a selection of meatless poultry dishes that duplicate the tastes and textures of favorite international recipes. These cholesterol free meals are also low in fats and sodium. No animal products are used in these vegan recipes.

CHICKEN PÂTÉ
Serves: 4 to 6
Preparation time: 10 minutes
Chill: 1 hour
INGREDIENTS
1 Chicken Free Chicken, cubed
1 stalk celery
6 Brazil nuts, raw
1 TBS. Vegenaise
PREPARATION
Into a food processor, place Chicken Free Chicken, nuts, vegetables and seasonings. Process 10-15 seconds to form paste. Chill well. Serve pâté on crackers, toast wedges or rollup. Makes a delicious grape leaf stuffing.
WALNUT DUCK PÂTÉ
Serves: 4 to 6
Preparation time: 10 minutes
Chill: 1 hour
INGREDIENTS
1 CB's Chicken Free Chicken
1/4 cup raw walnuts
1 apple, pealed and cored
1 tsp. lemon juice
1 TBS. onion
1/4 tsp. garlic
2 TBS. Vegenaise
1/4 tsp. celery seed
PREPARATION
Into a food processor, place Chicken Free Chicken, nuts, vegetables and seasonings. Process 10-15 seconds to form paste. Chill well. Serve pâté on crackers, toast wedges or rollup. Makes a delicious grape leaf stuffing.

STIR-FRY CHICKEN SALAD
Serves: 4 to 6
Preparation time: 12 minutes

INGREDIENTS
1 Chicken Free Chicken, 1/4 " strips
2 ounces green beans, fresh
2 ounces Red and/or Green Peppers, cut into 1/4" strips
1 ounce, onion, red, cut into 1/4 " strips
1 medium tomatoes, sliced
2 TBS, olive oil
2 tsp. Balsamic vinegar
garlic, chopped
PREPARATION
Stir fry onions and pepper two minutes. Add green beans, garlic, Chicken Free Chicken. Stir-fry 3 additional minutes. Served hot or chilled.
SUMMER CHICKEN SALAD
Serves: 4 to 6
Preparation time: 15 minutes
INGREDIENTS
1 CB's Chicken Free Chicken, sliced into 1" strips
1/2 red pepper, thinly sliced
2 stalks celery, 1/4" sliced
1 TBS red onion, thinly sliced
salad greens
tomato wedges
PREPARATION
Mix ingredients, except greens and tomatoes. Serve on bed of greens. Garnish with tomato wedges.
HIGH TEA CHICKEN SALAD

GRANDMA'S CHICKEN SOUP
Serves: 6 to 8
Preparation time: 10 minutes

INGREDIENTS
1 Chicken Free Chicken
3 quarts water
1 small turnip, cubed
2 carrots, coarsely sliced
1 medium potato, cubed
2 stalks celery, coarsely sliced
1 medium onion, quartered
1/4 cup fresh parsley, tied in bundle
1 clove garlic, optional
1 whole bay leaf
1 teaspoon lemon peel
1/4 teaspoon dried basil
1/2 teaspoon white pepper
1 TBS. olive oil
PREPARATION
Heat kettle with olive oil. Add vegetables; stir-fry until onions become translucent. Add water, Chicken Free Chicken and spices. Bring to a boil and simmer over low heat for 45 minutes. Remove bay leaf and parsley bundle. Flavor improves with overnight refrigeration.
HOME STYLE CHICKEN/VEGETABLE SOUP
Serves: 6 to 8

INGREDIENTS
1 Chicken Free Chicken, tear into bite sized pieces
1 small red or green pepper, 1/4" cubed
1 clove garlic, minced
1 small red Spanish onion, 1/4" cubed
1 carrot, 1/4" cubed
1 stalk celery, 1/4" sliced
1/4 lb. sliced mushrooms
1 small turnip, 1/4" cubed
3 quarts water
2 TBS. olive or canola oil
1 TBS. Bragg Liquid Aminos(r)
1 TBS. lemon juice
2 TBS. basil
1/2 tsp. powered mustard
PREPARATION
Into a preheat pot add oil, fresh vegetables and spices. Sauté onions until soft. Add liquids. Bring to a boil. Reduce to simmer. Cook about 20 minutes. Add Chicken Free Chicken to soup mixture. Continue to simmer 8 minutes. Top with oyster crackers or chopped scallions.
QUICK & EASY VEGGIE CHICKEN SOUP
Serves: 4 to 6

2 15 oz. cans vegetable soup
1 tsp. lemon juice

MINESTRONE CHICKEN SOUP

1-cup pasta
1 small red or green pepper, 1/4" cubed
2 15 oz. can vegetable broth
1 clove garlic, minced

1 stalk celery, 1/4" sliced
1/4 lb. sliced mushrooms
1 small eggplant, 1/4" cubed
15 oz. can beans (optional)
1-cup wine
1 TBS. olive or canola oil
1 TBS. Bragg Liquid Aminos(r)

PREPARATION
Into a preheat pot add oil, fresh vegetables and spices. Sauté onions until soft. Add liquids. Bring to a boil. Reduce to simmer. Cook about 20 minutes. In a separate pot, cook pasta. Drain pasta. Add pasta and Chicken Free Chicken to soup mixture. Continue to simmer 8 minutes. Top with oyster crackers, soy cheese or chopped green onion.
QUICK MINESTRONE SOUP
Serves: 4 to 6
Preparation time: 2 minutes

INGREDIENTS
1 Chicken Free Chicken
2 15 oz. cans Minestrone Soup
1/2 cup wine
1 1/2 cups water
PREPARATION
Into a saucepot, add soup and water. Bring to a boil. Add Chicken Free Chicken. Reduce to simmer. Cook 8 minutes. Add wine before serving. Top with oyster crackers, soy cheese or chopped green onion.
MENUDO SOUP
Serves: 6 to 8
Preparation time: 15 minutes
Cooking time: 30 minutes
INGREDIENTS
1 Chicken Free Chicken, 1" cubed
1-gallon water
2 onions, chopped 3 cups)
2 cloves garlic, minced
1 tsp. coriander seed, crushed
1 tsp. dried oregano, crushed
1/2 tsp. red pepper, crushed
1/2 tsp. black pepper
1 tsp lemon peel
2 cups prepared hominy, drained
PREPARATION
Simmer all ingredients, covered, for 10 minutes. Add hominy. Cover and simmer 20 minutes. Serve with hot corn tortillas and garnish with chilies, crushed red pepper and/or lime wedge.

TRADITIONAL HOLIDAY BIRD
Serves: 2 to 3
Preparation time: 10 minutes.
Cooking time: about 20 minutes
INGREDIENTS
1 Chicken Free Chicken
1 package stuffing mix
PREPARATION
Prepare stuffing mix per package directions. Mound stuffing, placing Chicken Free Chicken on top. Seal tightly. Bake per stuffing package directions. Remove cover for last 5 minutes and baste with Country Sauce.
FARMER'S SAUCE
Serves: 8
Preparation time: 5 minutes.
Cooking time: about 10 minutes
INGREDIENTS
1 can juice concentrate (i.e., orange, cherry, cranberry, raspberry, etc.)
2 TBS. dry wine or brandy
1 tsp. cornstarch
1-2 tsp. lemon juice
PREPARATION
Gently heat juice, cornstarch and wine in saucepan. Stir until thickened. Remove from heat; add lemon juice to taste.
COUNTRY CHICKEN STEW
Serves: 4 to 6

1-cup potatoes, 1" cubed
1 small red or green pepper, 1" cubed
1 red Spanish onion, 1" cubed

1 clove garlic, minced
1-cup wine
2 TBS. olive or canola oil

PREPARATION
Into a deep preheat pot add oil, fresh vegetables and spices. Sauté onions until soft. Add liquids. Bring to a boil. Reduce to simmer. Cook 20 minutes. Add Chicken Free Chicken and wine. Mix well. Cook for an additional 8 minutes.
CHICKEN KABOB
Serves: 4 to 6
Preparation time: 15 minutes

INGREDIENTS
1 CB's Chicken Free Chicken, 1" cubed
1 red or green pepper, 1" cubed
1 red Spanish onion, 1" cubed
1 small eggplant, 1/2" slices
8 oz. mushroom caps
12 8" bamboo skewers
1 clove garlic, minced
1/2 cup wine
2 TBS. olive or canola oil
1 TBS. Bragg Liquid Aminos
1 TBS. lemon juice
1 TBS. basil
1/4 tsp. red peppers (adjust to taste)
PREPARATION
Marinate: Blend wine, oil, lemon juice and spices.
Kabob: Build by alternating vegetables and Chicken Free Chicken on skewer, placing a mushroom cap on each end. Coat kabobs in marinate. Cook under broiler or on barbecue, 5 to 7 minutes, turning often. Serve on rice.
CHICKEN PAPRIKASH
Serves: 4
Preparation time: 10 minutes

INGREDIENTS
1 Chicken Free Chicken, quartered
1 small onion, chopped
1 small tomato, pealed and sliced
1 small green pepper, sliced
1 15 oz. can vegetable broth
1 TBS. olive or canola oil
1 TBS. lemon juice
1 tsp. sweet paprika (adjust to taste)
1 tsp. tomato paste
1 tsp. Bragg Liquid Aminos(r)
PREPARATION
Into a preheat pot add oil and onions. Sauté onions until brown. Add vegetables, tomato paste, seasonings and broth. Bring to a boil. Reduce heat, cover and simmer 10 minutes. Add Chicken, cover and continue to simmer 8 minutes. Serve with rice or noodles.
BBQ CHICKEN
Serves: 2 to 3
Preparation time: 5 minutes
Cooking time: 10 minutes
INGREDIENTS
1 Chicken Free Chicken
1 cup BBQ sauce Use your favorite
1 TBS olive oil
PREPARATION
Heat oil and BBQ sauce in a saucepan to a simmer. Add Chicken Free Chicken and heat 4 minutes. Cook on a hot BBQ about 3 minutes per side, until browned. Do not overcook.
CARY'S BBQ SAUCE
Serves: 4
Preparation time: 5 minutes
INGREDIENTS
3/4 cup ketchup
3 TBS Worcestershire sauce
1 TBS. water
1/2 tsp. mustard powder
Pepper to taste
PREPARATION
Mix all ingredients.
CHICKEN ADOBO
Serves: 4
Preparation time: 15 minutes
Cooking time: 20 minutes
INGREDIENTS
1 Chicken Free Chicken, tear into bite sized pieces
1 clove garlic, pealed
1 tsp. lemon peel
1 TBS Braggs Liquid Aminos
1/2 tsp. black pepper (freshly ground)
1/2 cup vinegar
1 TBS. olive oil
1-cup water (add as necessary)
PREPARATION
Marinate Chicken Free Chicken, garlic, Braggs, pepper and vinegar for 15 minutes. Reserving marinate, transfer garlic into preheated oil and stir-fry until brown, being careful not to burn garlic.
Add marinate and Chicken Free Chicken. Simmer 10 minutes. Serve over rice
CHICKEN FAJITA
Serves: 4
Preparation time: 15 minutes
Cooking time: 10 minutes
INGREDIENTS
Chicken Free Chicken, cut into 1/4 " wide strips
1 medium Red Peppers, cut into 1/4" strips
1 medium Green Peppers, cut into 1/4" strips
1 small Onion, red, cut into 1/4 " strips
3 Green Onions, cut into 1" strips
1/2 cup Cilantro, fresh, chopped
1 dozen corn tortillas, warmed
1/4 cup Olive oil
2 to 3 tsp. Fajita seasonings
PREPARATION
Stir-fry all ingredients. Serve on warm tortillas.
CHICKEN DIANE
Serves: 2-3
Preparation time: 5 minutes

INGREDIENTS
1 Chicken Free Chicken, thinly sliced
1 TBS. Olive Oil
1 clove garlic, crushed
1/4 onion, thinly sliced
3/4-ounce wine or brandy, heated.
PREPARATION
Fry crushed garlic and onions until onions turn translucent. Add thinly sliced Chicken Free Chicken. Cook 1 minute per side. Immediately transfer to a warm plate. Place the dish on a safe, stable table and pour the alcohol onto the plate. CAREFULLY IGNITE THE ALCOHOL. The alcohol will burst into FLAME and burn for a few seconds.
SWEET & SOUR CHICKEN
Serves: 4

INGREDIENTS
1 Chicken Free Chicken, cut into 3/4 inch cubes
1/2 cup pineapple, chunked, 1/4 cup reserved liquid
1/2 cup peppers, red 1/2 " cubed
1/4 cup onions, 1/2 " cubed
1/2 cup celery, thinly sliced
1 clove garlic, minced
1 TBS. olive oil
1 TBS. Bragg Liquid Aminos
1 TBS corn or potato starch
PREPARATION
Stir-fry onions, peppers, celery and garlic, cooking until the onions become translucent. Add Chicken Free Chicken and pineapple chunks. Cook for 1 minute. Mix starch with reserved pineapple liquid and add to stir-fry. Stir until thickened. Serve over rice or rice noodles.
HUNTERS' STEW
Serves: 4
Preparation time: 15 minutes
Cooking time: 20 minutes
INGREDIENTS
1 Chicken Free Chicken, cubed
1 small onion, chopped
2 tsp. flour
1 pint, prepared sauerkraut
1-ounce mushrooms
1 tsp. rice syrup
1 tsp. olive oil
1/2 cup water
1/4 cup dry red wine
PREPARATION
Cook onions and mushrooms in olive oil. Blend water and flour. Add all other ingredients. Mix well. Simmer 5 minutes. Serve over wild rice.
ROLLED CHICKEN WITH RASPBERRY SAUCE

INGREDIENTS
1 Chicken Free Chicken, thinly sliced
3 ounces Walnut Duck Pâté
1/2 cup Raspberry
12 sheets Fillo Dough
olive oil spray
PREPARATION
Spread pâté, layer of Chicken Free Chicken and row of raspberries on 3 layers of fillo sheets. Gently roll and place on an oiled baking pan. Bake 20 minutes in 325º F oven. Blend remaining raspberries, water and brandy. Heat to simmer. Serve on heated plate. Cover with raspberry sauce and serve.
RASPBERRY SAUCE

1/2 cup Raspberries
2 TBS. water
2 tsp. corn or potato starch
1 ounce Raspberry Brandy
PREPARATION
Blend raspberries and brandy. Heat to simmer. Mix water and starch. Add to simmering raspberries
MEXICAN CHICKEN
Serves 4
Preparation time: 30 minutes
Cooking 20 minutes.
INGREDIENTS
1 Chicken Free Chicken, cubed
1 Onions, cubed 1"
1/2 Bell pepper, cubed 1'
1 cup frozen or fresh corn
1 cup chopped tomatoes
chilies to taste
1 TBS. olive oil
PREPARATION
Stir-fry onions until browned. Add peppers and continue cooking 3 minutes. Add salsa and tomatoes. Bring to simmer. Add corn and Chicken Free Chicken. Heat for 5 minutes.
ORANGE ROASTED CHICKEN
Serves: 4

Cooking time: 50 minutes
INGREDIENTS
1 Chicken Free Chicken, sliced
1 onion cut into 1" cubes
1 green peppers cut into 1/2 inch stripes
1 carrot cut diagonally into 1/2 inch slices
1 celery stalk, cut diagonally into 1/2 inch pieces
1 orange, thinly sliced
1 potato, washed, retaining skin, cut into 1/2 inch slices
1 tsp. Bragg Liquid Aminos
1 TBS olive oil
1-cup water
1 clove garlic
PREPARATION
In olive oil, stir-fry onions and potatoes until onions become translucent. Add other vegetables, garlic and dry spices. Continue stir-fry until peppers are soft. Add Chicken Free Chicken. Stir fry additional 5 minutes. Add Bragg and water. Bring to simmer, covert and cook about 15 minutes, or until potatoes are soft.
CHICKEN MASALA CURRY
Vegan / Serves 4
Preparation time: 20 minutes
Cook time: 25 minutes
INGREDIENTS
1 Chicken Free Chicken, 2" cubed
1 onion, diced
1 tsp. garlic, crushed
1 tsp. ginger, crushed
1-2 TBS. Chicken Masala Spice
1/2 cup tomato, finely chopped
1 tsp cilantro, chopped
1 TBS. olive oil
1-cup water
PREPARATION
Sauté onions, garlic and ginger in oil until lightly browned. Add Masala spice and sauté 2 minutes. Add tomatoes. Cook 10 minutes. Add Chicken Free Chicken and cook an additional 5 minutes. Add water as necessary. Serve over rice.
TERIYAKI CHICKEN BOWL
Serves: 4
Preparation time: 20 minutes
Cooking time: 20 minutes
INGREDIENTS
1 Chicken Free Chicken, sliced into strips
1/2 cup onion, thinly sliced
2 mushrooms, sliced
1 celery stalk, thinly sliced
1/4 tsp. crushed garlic
1/4 tsp. crushed ginger
1/2 cup bamboo shoots cut into strips
1 tsp. sugar
1 tsp. rice vinegar
1 tsp. Bragg Liquid Aminos
1/2 tsp. cilantro, chopped
1 TBS. olive oil
1/2 cup water
PREPARATION
Sauté onions, garlic and ginger in olive oil until lightly browned. Add all other ingredients. Heat to simmer. Simmer 10 minutes. Serve over rice in a soup or salad bowl.
MOROCCAN CHICKEN WITH ALMONDS
Serves 4
Preparation time: 20 minutes
Cook time: 45 minutes
INGREDIENTS
1 Chicken Free Chicken, quartered
1 onion
1 TBS. crushed garlic
1 tsp. crushed ginger
1/2 tsp. ground pepper
1/4 tsp. ground tumeric
2 TBS. cilantro, chopped
1 TBS. olive oil
1/4 tsp. saffron
1/4 cup parsley
1/2 pound almonds, blanched
1/2 cinnamon sticks
2 cups water
PREPARATION
In a large bowl, mix ginger, pepper, garlic, tumeric and olive oil. Add Chicken Free Chicken, mix until all pieces are well coated. In a food processor or blender, prepare a paste of onion, parsley and cilantro. Place chicken in a oven pan and add onion-herb mixture, blanched almonds, cinnamon sticks and saffron. Add water to cover. Bake at 350ºF. 30 minutes. Before serving, remove cinnamon stick. Plate and serve over rice. Top with a sprinkle of cilantro. Serve over couscous.
CHICKEN TZIMMES
(Pronounced: Sim'-es)
Serves 4-6
Preparation time: 10 minutes
Cook time: 40 minutes
INGREDIENTS
1 Chicken Free Chicken, cubed
2 cups canned sweet potatoes
1 small red or green pepper, 1" sliced
1 red Spanish onion, 1" cubed
1 carrot, 1/2" sliced
1 stalk celery, 1" sliced
1 orange, sliced
1 lemon, sliced
1-cup dried fruit, cubed
1 clove garlic, minced
1-cup wine or apple juice
2 TBS. olive or canola oil
1 TBS. Bragg Liquid Aminos
1 TBS. lemon juice
1 TBS. basil
PREPARATION
Add all ingredients into a pot. Bring to a boil. Reduce to simmer. Cover tightly. Cook 40 minutes.
